Cooking over an open fire is something I am passionate about. For me, it means spending time with family, friends, or even alone in nature, enjoying a meal cooked over the fire. Sometimes simple and archaic like our ancestors, sometimes like modern gourmet chefs, but always with minimal effort. Sometimes we have dishes from all over the world, other times traditional fare based on old, almost forgotten recipes.


Nature is my kitchen.


A kitchen that is so practical, original, and sensual that any modern high-tech appliance pales in comparison and the microwave becomes a soulless device. Outdoor cooking offers a multidimensional sensory experience: the spicy scent of fire and wood fills my nose, the soft crackling of the flames gives me a familiar feeling of security, and the heat warms my cheeks. Above it all, the wide expanse of sky stretches out like a ceiling. While I cook and eat, I can enjoy the landscape or simply lie back and relax on the grass. At the same time, the unexpected can never be completely ruled out. Wild cooking fascinates me every time, because the mysterious magic of fire, the heart of wild cooking, is irresistible.


Open fires have largely disappeared from our lives and our consciousness, are subject to taboos and prohibitions, and have been almost completely suppressed by numerous laws. In my opinion, however, outdoor fires are one of the things we must not allow to die out.

Wherever people cook and eat, they are at least temporarily at home. Nature and the wilderness are then no longer foreign places. This leads to an enriching experience of nature, to a deep, joyful, and comfortable connection. The further we have distanced ourselves from nature in our everyday lives, the more healing it is to spend time outdoors in nature, without any pressure to perform. By cooking in the open air, we can discover a new living space and spend a relaxing time there.

I would like to take you to open-air fire pits and invite you to spend some time there with me. Because only by lingering can we discover the full beauty of nature and shed the pressures of time and the burdens of everyday life. Cooking over an open fire allows us to take a break from civilization. In our highly technological world and complex lives, simplicity is pure relaxation and pleasure. Wild cuisine does not require a lot of technology, offering opportunities for improvisation and experimentation. It allows us to enjoy simplicity and spices it up with a little romance, nostalgia, and a spirit of adventure.


In the long period from the first fire pits to the present day, numerous and varied techniques for cooking over an open fire have been developed, and a rich repertoire of recipes has been handed down to this day. It all started with an ancient oak tree. It made me curious to learn about the stories that connect us to the ancient giant trees in our country. Suddenly, I found myself in the middle of pre-Christian times, watching the tree festivals of the Celtic druids and witnessing the felling of the famous Donar Oak, which moved so many Germanic tribes to accept the new Christian religion.


But there were many more mysterious tree sanctuaries whose stories I wanted to learn about: gnarled, thousand-year-old yews, proud weather-beaten beeches, fairy larches high up in the mountains. I collected the old stories, legends, myths, songs, and customs that have accompanied us for millennia and still resonate today in the form of Christmas trees, palm blessings, maypoles, and topping-out ceremonies, whose deeper meaning I only now understood.


The tree is one of the oldest symbols of mankind and, as the tree of life, can be found in all cultures. Knowledge of the healing powers of trees goes back just as far. The giants of the plant kingdom have always been sought out by healers who knew how to make valuable remedies from roots, resin, shoots, and leaves.


Combined with my own many years of experience in herbal medicine, I have been able to add a chapter on the healing properties of each tree, mostly with tried and tested recipes for making your own teas, ointments, tinctures, poultices, etc.


But trees also provide for our physical well-being, supplying the raw materials for the preparation of many delicious foods and beverages.


During my “tree time,” I repeatedly served eager guests and friends new delicacies such as maple rice, fir honey, sloe liqueur, elderberry cake, quince bread...


After three years, I compiled everything I had learned about trees from my experiences, what I had heard, and what I had discovered. Of course, the book also had to contain illustrations that would enable everyone to recognize the tree they were looking for, for example, to distinguish a rowan from an ash tree. And then I found Peter Ebenhoch, a graphic artist who is very good at drawing and who spent many days roaming the woods with me, sketching the trees on the spot.
